Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 6 tbsp cold unsalted butter, cubed
- 3/4 cup buttermilk, cold
- 1 lb breakfast sausage, crumbled
- 3 tbsp all-purpose flour
- 2 1/2 cups whole milk
- 1/2 tsp black pepper, plus more to taste

Mix the dry ingredientsWhisk together the flour, baking powder, baking soda, and salt in a large bowl.

Cut in the butterWork the cold butter into the flour with your fingers or a pastry cutter until it resembles coarse crumbs.

Add the buttermilkPour in the buttermilk and stir just until a shaggy dough forms. Do not overmix.
