Flaky buttermilk biscuits smothered in a peppery sausage gravy, a Southern breakfast classic ready in under 30 minutes.

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 6 tbsp cold unsalted butter, cubed
  • 3/4 cup buttermilk, cold
  • 1 lb breakfast sausage, crumbled
  • 3 tbsp all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 tsp black pepper, plus more to taste

    Mix the dry ingredients
    Whisk together the flour, baking powder, baking soda, and salt in a large bowl.

    Cut in the butter
    Work the cold butter into the flour with your fingers or a pastry cutter until it resembles coarse crumbs.

    Add the buttermilk
    Pour in the buttermilk and stir just until a shaggy dough forms. Do not overmix.

    Shape and bake the biscuits
    Pat the dough into a 1-inch-thick round, cut into biscuits, and bake at 425°F for 12-15 minutes until golden.

    Brown the sausage
    While the biscuits bake, cook the sausage in a skillet over medium heat until browned, about 6-8 minutes.

    Make the gravy
    Sprinkle the flour over the sausage and stir for 1 minute, then slowly whisk in the milk. Simmer until thickened, 4-5 minutes, and season with pepper.

    Split the warm biscuits and ladle the sausage gravy generously over the top.
