Smothered Pork Chops with Onion Gravy

Tender pork chops seared until golden, then simmered low and slow in a silky caramelized onion gravy, best served over rice or mashed potatoes.

Ingredients

  • 4 bone-in pork chops
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup all-purpose flour
  • 3 tbsp vegetable oil
  • 2 large yellow onions, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp smoked paprika

Instructions

    Season and dredge the chops
    Pat the pork chops dry and season with salt and pepper, then dredge each in flour, shaking off the excess.

    Sear the chops
    Heat the oil in a large skillet over medium-high heat and sear the chops 3-4 minutes per side until golden. Remove and set aside.

    Caramelize the onions
    Add the sliced onions to the same skillet and cook over medium heat for 10-12 minutes, stirring occasionally, until deeply golden. Stir in the garlic and smoked paprika.

    Build the gravy and simmer
    Pour in the chicken broth and Worcestershire sauce, scraping up any browned bits. Return the chops to the skillet, cover, and simmer for 25-30 minutes until tender.

    Serve
    Taste the gravy and adjust seasoning, then serve the chops smothered in onion gravy over rice or mashed potatoes.
