Smothered Pork Chops with Onion Gravy

Ingredients
- 4 bone-in pork chops
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 cup all-purpose flour
- 3 tbsp vegetable oil
- 2 large yellow onions, sliced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1/2 tsp smoked paprika

Season and dredge the chopsPat the pork chops dry and season with salt and pepper, then dredge each in flour, shaking off the excess.

Sear the chopsHeat the oil in a large skillet over medium-high heat and sear the chops 3-4 minutes per side until golden. Remove and set aside.

Caramelize the onionsAdd the sliced onions to the same skillet and cook over medium heat for 10-12 minutes, stirring occasionally, until deeply golden. Stir in the garlic and smoked paprika.

Build the gravy and simmerPour in the chicken broth and Worcestershire sauce, scraping up any browned bits. Return the chops to the skillet, cover, and simmer for 25-30 minutes until tender.
