A rich, custardy baked mac and cheese with a golden, crispy top and three kinds of melty cheese.

Ingredients

  • 1 lb elbow macaroni
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 2 large eggs
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Colby jack cheese
  • 1/2 cup grated parmesan cheese
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp paprika

Instructions

    Boil the pasta
    Cook the macaroni in salted boiling water until just al dente, then drain.

    Make the roux
    Melt the butter in a saucepan, whisk in the flour, and cook for 1 minute, then slowly whisk in the milk until smooth.

    Thicken the sauce
    Simmer the sauce for 5 minutes, stirring often, until thickened.

    Combine the cheese sauce
    Whisk the eggs in a bowl, temper with a little hot sauce, then stir in most of the cheddar, Colby jack, and parmesan along with the salt and pepper.

    Assemble and bake
    Combine the sauce with the macaroni, pour into a buttered baking dish, top with remaining cheese and paprika, and bake at 350°F for 25-30 minutes until golden and bubbly.
