Instructions

  1. 1
    Make the roux
Melt the butter in a saucepan over medium heat, cook the onion until soft, then whisk in the flour and cook for 1-2 minutes.
  2. 2
    Build the sauce
Slowly whisk in the milk and chicken stock, then simmer, stirring often, until thickened, about 5 minutes.
  3. 3
    Melt in the cheese
Remove from heat and stir in the cheddar cheese, garlic powder, cayenne, salt, and pepper until smooth.
  4. 4
    Combine the casserole
In a large bowl, fold together the cooked rice, steamed broccoli, and cheese sauce until evenly coated.
  5. 5
    Assemble
Spread the mixture into a buttered 9x13-inch baking dish and top with crushed crackers tossed with melted butter.
  6. 6
    Bake
Bake at 350°F for 25-30 minutes, until bubbling around the edges and golden on top.
Okra & Oak Tip

Steam the broccoli only until bright green and just tender, since it will continue cooking in the oven and can turn mushy if overdone.

Storage

Cover and refrigerate up to 4 days; reheat covered in the oven at 325°F to keep the cracker topping from getting soggy.
