Ingredients

  • 1 cup mashed cooked sweet potato, cooled
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice

Instructions

    Beat the butter and brown sugar together until fluffy, then mix in the mashed sweet potato, egg yolk, and vanilla until fully combined.

    Whisk together the flour, baking soda, cinnamon, ginger, and salt. Fold into the sweet potato mixture just until no dry streaks remain.

    Drop rounded tablespoons of dough onto parchment-lined baking sheets, spacing 2 inches apart, and bake at 350°F for 11 to 13 minutes until set at the edges.
