Crispy, golden fried chicken marinated overnight in seasoned buttermilk for maximum flavor and tenderness.

Ingredients

  • 8 chicken thighs and drumsticks
  • 2 cups buttermilk
  • 1 tbsp hot sauce
  • 2 tsp kosher salt, divided
  • 2 cups all-purpose flour
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • vegetable oil, for frying

Instructions

    Marinate the chicken
    Whisk the buttermilk, hot sauce, and 1 teaspoon salt together, then submerge the chicken pieces and refrigerate for at least 4 hours or overnight.

    Season the flour
    Combine the flour, paprika, garlic powder, onion powder, cayenne, remaining salt, and black pepper in a shallow dish.

    Dredge the chicken
    Remove the chicken from the buttermilk, letting the excess drip off, then coat each piece thoroughly in the seasoned flour.

    Heat the oil
    Fill a deep skillet with 2 inches of oil and heat to 350°F.

    Fry the chicken in batches for 12-15 minutes per side, until deep golden brown and cooked through, then drain on a wire rack.
