Ingredients

  • 2 cans (14.75 oz each) pink salmon, drained and flaked
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced bell pepper
  • 2 eggs, beaten
  • 1/2 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • 4 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped parsley

Instructions

    Remove any large bones and skin from the salmon, then flake it thoroughly with a fork in a large bowl.

    Add the onion, bell pepper, eggs, cornmeal, flour, Old Bay, and black pepper to the salmon and mix until it just holds together.

    Form the mixture into 8 patties about 1/2 inch thick, pressing them firmly so they don't crumble in the pan.

    Heat 1/4 inch of oil in a skillet over medium heat and fry the patties 3 to 4 minutes per side until deep golden and crisp.

    Move the finished croquettes to a paper towel-lined plate to drain excess oil.

    Wipe out the skillet, melt the butter over low heat until it turns lightly golden, then stir in the lemon juice and parsley.
