  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup whole milk
  • 1/3 cup honey, plus more for serving
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

    Preheat the oven to 375°F and butter a 9-inch square baking pan.

    Whisk together the cornmeal, flour, sugar, baking powder, and salt in a large bowl.

    In another bowl, whisk the milk, honey, eggs, and melted butter until smooth and glossy.

    Pour the wet mixture into the dry ingredients and stir gently until just combined, taking care not to overmix.

    Spread the batter into the prepared pan and bake for 25 to 28 minutes until the top springs back and the edges pull slightly from the pan.

    While still warm, brush the top with a little extra honey and let cool for 10 minutes before cutting into squares.

Store covered at room temperature for up to 3 days; warm individual pieces in the microwave for 10 seconds before serving.
