Loaded Sunday Breakfast Skillet
Crispy potatoes, smoky sausage, sweet peppers, and melted cheese all come together in one skillet, finished with eggs baked right on top.

This is the breakfast that uses up whatever's in the fridge and turns it into something worth waking up early for. Everything cooks in a single skillet, ending with eggs nestled into the hash and baked just until the yolks turn glossy.

- 1 1/2 pounds russet potatoes, diced small
- 3 tablespoons vegetable oil, divided
- 1/2 pound smoked sausage, sliced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 4 eggs
- 2 tablespoons sliced green onions

Crisp the potatoesHeat 2 tablespoons of oil in a large oven-safe skillet over medium-high heat and cook the diced potatoes for 12 to 15 minutes, stirring occasionally, until golden and tender.

Preheat the ovenWhile the potatoes cook, preheat the oven to 375°F.

Brown the sausagePush the potatoes to one side, add the remaining oil, and brown the sausage slices for about 5 minutes.
