Lowcountry Shrimp and Grits with Andouille Sausage

This dish started as a dockworker's breakfast and grew up into a supper-table favorite along the coast. Slow-cooked grits turn silky under a blanket of butter and cheese, and the shrimp cook fast in the same skillet where the sausage left all its flavor behind.

- 1 cup stone-ground grits
- 4 cups chicken broth
- 1 cup whole milk
- 1 cup sharp cheddar, shredded
- 3 tablespoons butter, divided
- 1 pound large shrimp, peeled and deveined
- 6 ounces andouille sausage, sliced
- 3 cloves garlic, minced
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- 1 tablespoon Cajun seasoning
- 1 cup low-sodium chicken stock
- 2 green onions, sliced

Cook the gritsBring the chicken broth and milk to a boil, whisk in the grits, then reduce heat and simmer 25 to 30 minutes, stirring often, until thick and creamy.
