Juicy spiced peaches baked under a golden, buttery biscuit-like topping, best served warm with vanilla ice cream.

Ingredients

  • 6 cups fresh or frozen sliced peaches
  • 3/4 cup granulated sugar, divided
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup whole milk
  • 1/2 cup unsalted butter, melted

Instructions

    Prepare the peaches
    Toss the peaches with 1/4 cup sugar, cinnamon, and lemon juice, then set aside to macerate.

    Make the batter
    Whisk the flour, remaining sugar, baking powder, and salt, then stir in the milk just until combined.

    Layer the cobbler
    Pour the melted butter into a baking dish, pour the batter over the butter, then spoon the peaches and their juices evenly over the top without stirring.

    Bake
    Bake at 350°F for 40-45 minutes until the top is golden brown and the batter has risen through the fruit.

    Cool slightly and serve
    Let the cobbler rest for 10 minutes before serving warm, ideally with a scoop of vanilla ice cream.
