Ingredients
- 1 lb elbow macaroni
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 2 large eggs
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded Colby jack cheese
- 1/2 cup grated parmesan cheese
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp paprika

Boil the pastaCook the macaroni in salted boiling water until just al dente, then drain.

Make the rouxMelt the butter in a saucepan, whisk in the flour, and cook for 1 minute, then slowly whisk in the milk until smooth.

Thicken the sauceSimmer the sauce for 5 minutes, stirring often, until thickened.

Combine the cheese sauceWhisk the eggs in a bowl, temper with a little hot sauce, then stir in most of the cheddar, Colby jack, and parmesan along with the salt and pepper.

Assemble and bakeCombine the sauce with the macaroni, pour into a buttered baking dish, top with remaining cheese and paprika, and bake at 350°F for 25-30 minutes until golden and bubbly.
