Collard greens simmered low and slow in smoky turkey broth until deeply tender, best served with cornbread to soak up the pot likker.

Ingredients

  • 2 lbs collard greens, stemmed and chopped
  • 1 smoked turkey leg
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tsp crushed red pepper flakes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil

Instructions

    Sauté the aromatics
    Heat the oil in a large pot over medium heat and sauté the onion and garlic until softened, about 4 minutes.

    Simmer the turkey
    Add the smoked turkey leg and chicken broth, bring to a simmer, cover, and cook for 45 minutes to build flavor.

    Add the greens
    Stir in the collard greens in batches along with the vinegar, red pepper flakes, salt, and pepper.

    Cook low and slow
    Cover and simmer on low for 1 to 1.5 hours, stirring occasionally, until the greens are deeply tender.

    Shred and serve
    Remove the turkey leg, pull the meat from the bone, stir it back into the pot, and serve hot with the pot likker.
