Ingredients

  • 2 lbs sweet potatoes (about 3 medium)
  • 1 unbaked 9-inch pie crust
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt

Instructions

    Roast the sweet potatoes
    Preheat oven to 400°F. Pierce sweet potatoes and roast 45–55 minutes until very tender. Cool slightly, then peel.

    Prep the crust
    Reduce oven to 350°F. Fit the crust into a 9-inch pie dish and crimp the edges.

    Mash
    Mash the roasted sweet potato until smooth.

    Mix the filling
    Beat in melted butter, both sugars, eggs, evaporated milk, vanilla, cinnamon, nutmeg, ginger, and salt.

    Bake
    Pour filling into the crust and bake 45–50 minutes until just set with a slight jiggle.

    Cool completely
    Cool on a wire rack at least 3 hours before slicing.
